Prudence is a virtue (but so is shamelessness).

Every few months or so, my brother updates me on his friend’s life. Because I’m not totally sure I have permission to write about this friend, I’ll call him Fred Stylish and change up a few details, lest we upset the muse. I must admit, Fred Stylish and his antics have fascinated me for years. The name alone is cause for curiosity, but he started to really pique my interest when I heard he had taken a job in Costa Rica despite not speaking any Spanish. By the time he picked a pitbull off the street, named it, and proceeded to attempt to house break it, I told my brother that, moving forward, I would need to be updated on all things Fred Stylish.

True to his word, my brother forwards me relevant updates on Stylish every so often. I received the text in which Stylish described a narrow encounter with management, in which they almost discovered he still couldn’t conjugate. Most recently, he forwarded me indecipherable images and videos from Stylish’s night, starting with the man sporting balloons as breasts and ending with a video of him being serenaded by a woman he had clearly met that night.

My fascination with Stylish and his antics stems from their opposition to my deeply prudent nature. Yes, prudence is a virtue, but in high enough doses it can also be a paralyzing poison. I agonized for years on whether to get a dog, and for several months managed to convince myself a toy poodle was a much more sensible choice than the infamously stubborn, disobedient Shiba Inu. I have taken cooking classes and experimented at home for years, yet doubt I have what it would take to become a professional baker. Sometimes I wonder if the “bilingual” line in my CV is too boastful given that I often forget both Spanish and English words, and working up the courage to add the title “writer” to my LinkedIn profile left me flattened to the couch for the better part of a day. Having experienced a serious career derailment in which I stepped down from a tenured academic position, and too many fruitless interviews to count, I labelled it prudent to join those in the “job for money” camp, and relegate dreaming to my private time.

A few months ago, bored and suffering from a spout of Sunday ennui, I found myself watching a compilation of the work done in several Korean and Japanese bakeries. Faceless bakers weighed ingredients against a silent backdrop. Several rhythms could be heard: the cracking of eggs, the thump of plastic containers, the clinking of ice cubes, the hum of large dough hooks spinning in industrial-sized bowls. I watched, mesmerized, wondering what that job might be like. The idea had just started to germinate when I was interrupted by a text from my brother. Stylish had sent his friends in Mexico a GIF of his face, followed by flashy colours and the announcement “I’m leaving Costa Rica, bitches!,” followed by an address and time for the farewell party. I stared at the GIF, then back at gloved hands rolling croissants, and back at the GIF again. Right around the time pillowy croissants exited the proofer, I picked up my phone again and messaged my friend Marine.

“Are you still in touch with that baker you used to work for?”

“Oui. Do you need a cake made?”

“No. I want to make cakes. Does he need help?”

“Do you need a job?”

“No, I have a job. I need to bake.”

“I mean, I can ask.”

“Merci.”

Two days later, Marine let me know the owner of the bakery, an Algerian specializing in artisanal viennoiserie and patisserie, had said to swing by on Saturday. I had not expected an answer, much less an invitation. I pictured him taking one look at my arms and wiping a tear away in between chuckles, letting me know that certain physical requirements were needed for professional baking. The fantasies in which he said yes were followed by images of me dropping flour everywhere, or worse, a freshly baked tray of mixed berry palais, and being escorted out of the establishment by bored-looking policemen. My brain flashed helpful premonitions all week long, and I debated on abandoning the mission. Marine’s good luck message on Friday forced my hand; I had asked for an introduction, the least I could do was show up.

I timed my visit to the bakery, not too early, as to not distract during what would be a busy time, but not too late, lest he think I can’t wake up early. Inside the bakery, I approached one of the girls at the cash and said I was there to speak with the owner, that I was a friend of Marine’s, that he was expecting me. After a nod and a smile, the girl headed to the back of the bakery. I overheard her repeat herself a few times. I briefly considered running out of the front door, it wasn’t too late, I don’t go by that area that often anyway. In the midst of negotiating the discomfort between the impetus to flee and my seemingly cemented feet, the owner emerged from the kitchen, placing oven mitts behind the cash register.

“Salut!” he offered me a fist bump, which I returned with considerable effort.

“Uh, hi, yes, thanks for meeting me,” I started.

This is it, time to Stylish the moment. Just show up and see what happens, it always worked out for him.

“You are Marine’s friend?”

“Yes, we’ve been friends for a few years.”

“Right, say hi to her. But, you know, I am not looking to hire anyone.”

Fuck.

“Uhh.”

Rally, Ailén, Rally.

“That’s okay, I’m not looking for a job.”

Where did that come from?

“So you want to, what, observe?”

“Observe, scale ingredients, wash whisks, whatever you need. I have a full-time job, so I can only do weekends, is that okay?”

He touched his beard and shrugged a bit.

“Sure, come back next Saturday.”

“Great, what time?”

“Six is okay for me, too early?”

“Not at all. See you at six next Saturday.”

I had heard all I needed and did not want to run the risk of him changing his mind. I shot up, scraping the chair against the linoleum floor.

“Oh and hi to Marine, eh? She’s great.”

“For sure, uh-huh,” I said, telegraphing a farewell fist bump halfway out the door.

Back in the car, I watched families and groups of friends wander in and out of the bakery. Despite the cold, chairs were out and a father and son ate their croissants with gloves on, puffed into their jackets like emperor penguins. Once again, I was gripped by terrible images, this time of burning caramel and having to shamefully scrape the burnt sugar with steel wool, the owner shaking his head with solemn disappointment. I squeezed my eyes shut and pushed it away. I hadn’t taken down the owner’s phone number, nor had he mine. I would have to show up next Saturday and see what came.

Cada tanto mi hermano me pone al día sobre la vida de su amigo. Como no sé si tengo permiso para escribir sobre dicho amigo, lo voy a llamar Fred Stylish y paso a cambiar algunos detalles, cuestión de no disgustar a la musa. Debo admitir que las aventuras de Fred Stylish me fascinan desde hace años. El nombre desde ya despierta curiosidad, pero mi interés verdadero comenzó cuando me enteré de que había aceptado un trabajo en Costa Rica sin hablar una palabra de español. Cuando me enteré que recogió un pitbull de la calle, le puso nombre y pasó a intentar hacerlo más cacero, le dije a mi hermano que, por favor me mantuviera al tanto de cualquier ocurrencia de Fred Stylish.

Fiel a su palabra, mi hermano me envía novedades sobre Stylish cada tanto. Recibí el mensaje en el que contaba cómo había tenido un encuentro tenso con la gerencia, en la cual casi se descubre que todavía no sabía conjugar. Los últimos mensajes sobre el muchacho fueron imágenes y videos indescifrables de una noche que comenzó con él usando globos de tetas y terminó con un video donde una mujer—conocida esa noche—lo serenaba.

Mi fascinación por Stylish y sus ocurrencias nace de lo opuestas que son a mi naturaleza prudente. Sí, la prudencia es una virtud, pero en dosis suficientemente altas puede volverse un veneno paralizante. Pasé años debatiéndome si tener un perro, y durante varios meses estaba segura que un caniche toy sería más sensato que un Shiba Inu, famosos por lo tercos y desobedientes. A pesar de haber tomado clases de cocina y experimentado en casa durante años, aun así dudo de tener pasta para pastelera. A veces me pregunto si la línea "bilingüe" en mi CV alardea demasiado dado que suelo olvidar palabras en español e inglés y juntar coraje para agregar "escritora" a mi perfil de LinkedIn me dejó tirada en el sillón medio día. Después de haber vivido un descalabro profesional serio en el que renuncié a un puesto académico estable, y haber pasado por demasiadas entrevistas infructuosas, decidí que lo más prudente sería sumarme al grupo de los que tienen un "trabajo por dinero" y relegar los sueños a mi tiempo libre.

Hace unos meses, aburrida y padeciendo la clásica melancolía dominguera, me encontré mirando una compilación de videos de panaderías coreanas y japonesas. Panaderos sin rostro pesaban ingredientes en silencio. Se oían distintos ritmos: el crujir de huevos al romperse, el golpe seco de recipientes de plástico, el tintineo de cubos de hielo, el zumbido de ganchos amasadores girando en enormes bols industriales. Miré, hipnotizada, preguntándome cómo sería hacer ese trabajo. La idea apenas empezaba a germinar cuando me interrumpió un mensaje de mi hermano. Stylish les había mandado un GIF a sus amigos en Costa Rica, donde aparecía su cara enmarcada por colores brillantes y el anuncio: "¡Me voy de Costa Rica, pendejos!", seguido de una dirección y la hora de la fiesta de despedida. Miré el GIF, después manos enguantadas formando croissants, y otra vez el GIF. Justo cuando croissants esponjosos salían del horno de fermentación, agarré el teléfono de nuevo y le escribí a mi amiga Marine.

—¿Todavía tenés contacto con el pastelero con el que trabajabas?

—Oui. ¿Necesitás que te haga una torta?

—No. Quiero hacer tortas. ¿Necesita ayuda?

—¿Necesitás laburo?

—No, trabajo tengo. Necesito amasar.

—O sea, le puedo preguntar.

—Merci.

Dos días después, Marine me avisó que el dueño de la pastelería, un argelino especializado en viennoiserie y pastelería artesanal, había dicho que pasara el sábado. Yo no esperaba respuesta, mucho menos una invitación. Lo imaginé mirándome los brazos, secándose una lágrima entre carcajadas y explicándome que la panadería profesional requería ciertas condiciones físicas. En las fantasías en las que me decía que sí, me veía tirando harina por todos lados o, peor, volcando una bandeja recién horneada de palets de frutos rojos, para después ser escoltada fuera del local por policías con cara de hastío. Mi cerebro me regaló premoniciones útiles toda la semana, y pensé seriamente en abandonar misión. El mensaje de buena suerte de Marine el viernes, sin embargo, me dejó sin escapatoria; había pedido conocerlo, lo mínimo que podía hacer era presentarme.

Calculé mi llegada a la panadería: no demasiado temprano, para no interrumpir las obligaciones matutinas, pero tampoco demasiado tarde, para que no pensara que sería capaz de levantarme temprano. Al entrar, me acerqué a una de las chicas de la caja y le dije que estaba ahí para hablar con el dueño, que era amiga de Marine, que él me estaba esperando. Con una sonrisa la chica se fue para la cocina. La escuché repetir el mensaje un par de veces. Se me ocurrió salir corriendo; todavía estaba a tiempo, no paso por esa zona todos los días. En medio de la lucha entre el impulso de huir y la extraña inercia que me mantenía clavada al suelo, el dueño apareció desde la cocina, dejando un par de manoplas detrás de la caja.

—¡Salut! —me saludó con el puño extendido. Me costó, pero se lo choqué.

—Ehh, hola, sí, gracias por recibirme —empecé.

Bueno, listo, momento de hacerse el Stylish. Presentarme y ver qué pasa, a ese siempre le va bien.

—¿Sos amiga de Marine?

—Sí, hace años que somos amigas.

—Bien, mandale saludos. Pero mirá que no estoy buscando a nadie, eh.

La puta madre.

—Ehh.

Dale, Ailén, remontala.

—Todo bien, no estoy buscando trabajo.

¿De dónde salió eso?

—¿Entonces querés, qué, observar?

—Observar, pesar ingredientes, lavar batidores, lo que necesites. Tengo un laburo de tiempo completo, así que solo puedo los fines de semana, ¿te sirve?

Se tocó la barba y se encogió de hombros.

—Sí, volvé el sábado que viene.

—Genial, ¿a qué hora?

—A las seis me va bien, ¿muy temprano?

—Para nada. Nos vemos el sábado a las seis.

Tenía toda la información que precisaba y no quería arriesgarme a que se arrepintiera. Me puse de pie de golpe, arrastrando la silla contra el piso de linóleo.

—Ah, y saludos a Marine, ¿eh? Es una genia.

—Sí, sí, claro —respondí, tirando un puño de despedida a medio camino de la puerta.

De vuelta en el auto, miré a las familias y grupos de amigos entrar y salir de la pastelería. A pesar del frío, las mesas de afuera estaban ocupadas, y un padre y su hijo comían sus croissants con guantes puestos, encogidos en sus camperas como pingüinos emperador. De nuevo me atacaron imágenes terribles, esta vez una olla de caramelo quemado, yo raspando azúcar chamuscado con una esponja de acero mientras el dueño negaba con la cabeza, solemne y decepcionado. Cerré los ojos con fuerza y forcé la imagen fuera de mi mente. No le había pedido su número ni él el mío. No tocaba otra que presentarme el próximo sábado y ver qué tal.
